Chorizo Pizza on Boboli

INGREDIENTS:

  • 15 oz El Popular Longaniza Chorizo
  • 2 medium Onions sliced
  • 2 teaspoons Garlic minced
  • 2 tablespoons Oregano
  • 1 teaspoon Cumin
  • 2 large Boboli Pizza Rounds
  • 12 oz. grated Mozzarella
  • 2 tablespoons Olive
  • ½ cup Red Bell Peppers thinly sliced
  • 4 Yukon Gold Potatoes cooked peeled and diced
  • 1 ¼ teaspoons Salt
  • 1 cup medium Salsa
  • 12 oz. grated 3 Blend Cheese

GARNISHES:

  • 1 cup Crema Mexican or Sour Cream
  • ½ cup Green Onion chopped
  • ½ cup Cilantro chopped

INSTRUCTIONS:

  1. Remove casing from Longaniza and cook 8-10 minutes. Set aside to cool.
  2. In a large skillet over medium heat sauté onion and red peppers in olive oil 8-10 minutes.
  3. Add garlic, potatoes, oregano, salt and cumin stirring occasionally for approximately 10 minutes.
  4. Set this aside.
  5. Cook salsa until it thickens and cool.
  6. Place Boboli on a large baking sheet lined in parchment paper. Spread salsa over crust.
  7. Use ½ of the potato mixture on each crust, then ½ of the onion mixture, and sprinkle with cheeses.
  8. Bake 12-15 minutes until golden and cheese melted in 400° oven.
  9. Slice into wedges and serve with garnishes.
