Chorizo Succotash with Corn, Hominy & Baby Lima Beans

  • 12 oz El Popular Original Chorizo
  • 4 strips Bacon
  • 3 tablespoons Shallots dice
  • 1 cup canned Hominy drained
  • ½ teaspoons Garlic salt
  • 1 cup heavy Cream
  • Salt, Pepper, Cajun seasoning to taste
  • 1 Link (6 oz) El Popular Longaniza
  • 4 tablespoons Butter
  • 1 whole Kernel Corn
  • 1 cup frozen Baby Lima Beans
  • ½ cup Chicken Broth
  • 1 tablespoon Parsley chopped


  1. Remove the casings from both styles of chorizo. Pan fry the Longaniza and ½ the Original Chorizo for 8-10 minutes separately and set aside.
  2. When Longaniza has cooled, quarter cut lengthwise and dice.
  3. Over medium heat cook bacon until crisp and set aside.
  4. In a medium size pot, sauté 2 tablespoons of the butter and shallots until soft. Add ½ the Original Chorizo and cook until brown, 8-10 minutes.
  5. Add corn and red peppers and cook for an additional 5 minutes.
    Stir in hominy, lima beans, garlic salt, Cajun seasoning, and chicken stock. Continue to cook until liquid is reduced.
  6. Add Heavy cream, 2 Tablespoons butter, all Longaniza, remaining cooked Original Chorizo to the pot and reduce t thicken.
  7. Crumble the bacon add to pot, season to taste.
  8. To serve, garnish with parsley.
