El Popular Tostada Tropical Recipe

Tostada Tropical

Prep Time: 15-20 min.     
Start to Finish: 35 min.     
8 Servings


  • 1 pkg. (12 oz.) El Popular Chorizo
  • ½ Pineapple diced into ½ inch squares
  • 1 Yellow Bell Pepper diced
  • 3 Yukon Gold Potatoes, diced into ¼ inch squares
  • 1 cup Asiago cheese grated
  • ½ head Lettuce shredded
  • Salt to taste
  • 8 Tostadas
  • 1 medium Onion finely chopped
  • 1 can (16oz.) Refried Beans
  • ¼ cup Corn Oil
  • 1 medium Tomato diced
  • Crema Mexican or Sour Cream


  1. Remove casing from chorizo and place in large skillet. Cook 8-10 minutes over medium heat.
  2. Meanwhile, cook beans in medium pan over medium heat.
  3. Break up chorizo while cooking. Drain.
  4. Add chopped onions, peppers, tomatoes, and sauté for 2 minutes.
  5. Add pineapple and continue to sauté over low flame. Salt and season to taste.
  6. Lightly spread beans over tostada and cover with a layer of chorizo mixture.
  7. Garnish with Crema Mexicana or Sour Cream, lettuce, tomato and cheese.
